Mom's Beef Stroganoff

This is a warm, savory dish that's not at all traditional but definitely delicious! The mushrooms, garlic, and beef are very hearty and the sour cream adds a richness and brightness to the meal. This is a doubled recipe, so feel free to cut it in half. This recipe has been modified from the original to improve the browning and flavor of the ingredients.


Ingredients:

  • 4 Tbsp. salted butter

  • 1/2 cup diced onion

  • 8-12 oz. (227-340 g) mushrooms, sliced 1/4 inch thick

  • 2 tsp. salt (or to taste)

  • 1⁄2 tsp. black pepper

    1 lb. lean ground beef (454 g)

  • 1 minced garlic clove

  • 2 tbsp. flour

  • 1 10.5 oz. (300 g) can cream of chicken soup (don't use reduced sodium/fat)

  • 3/4 - 1 1/2 cups 14% or 18% fat sour cream (to taste)

  • 1 tbsp. minced or dried parsley

  • 10 oz. egg noodles (curly noodles)

  • 1 Tbsp. salt for boiling the noodles


Directions:

  1. Sauté diced onion in 2 Tbsp. of the butter on low-medium heat until golden brown, stirring often. Remove the onions onto a plate/bowl.

  2. Add the remaining 2 Tbsp. of butter and the mushrooms to the pan. Stir to coat. Sprinkle over the 2 tsp. salt and 1/2 tsp. pepper and cook. Once the mushrooms start releasing liquid, increase the heat to medium and cook well, until dark brown, stirring often. Add the mushrooms to the onion plate.

  3. With the pan on medium heat, add the ground beef and press well on the pan, to get a good sear (do not burn the beef). Flip and repeat on the other side. Lower the heat to low-medium and cook, breaking up the beef. Drain half, or all of the fat.

  4. Add the minced garlic and cook for 1-2 minutes on low-medium heat.

  5. Add the flour and stir well, cooking for about 1-2 minutes.

  6. Meanwhile, start boiling water with about 1 Tbsp. of salt for the noodles.

  7. To the beef, add in the cooked mushrooms, onions, and cream of chicken soup and mix well.

  8. Simmer sauce for 10 minutes, stirring occasionally. Stir in sour cream, tasting as you go to decide how much sour cream is needed. Heat through. It will be thick.

  9. Mix in the cooked noodles and parsley.

  10. 3-4 servings.
