Chicken/Turkey Burgers

These burgers are delicious, packed full of "secret" vegetables and are a lighter version of traditional beef burgers. Other than dicing the vegetables they come together very quickly and I hope you give them a try!

Ingredients:

Patties:

  • 1 lb. ground chicken or turkey, thawed

  • ½ cup finely diced onion

  • ½ cup finely diced red bell pepper

  • ½ cup finely diced mushrooms

  • ¾ - 1 tsp. seasoning salt

  • ¾ - 1 tsp. Garlic powder

  • 1/2 tsp. paprika

  • Optional: Other spices

  • 1/3 cup bread crumbs

  • 1 egg

Additional:

  • Salt

  • Pepper

  • Buns

  • Optional Toppings: Cheese, Mayonnaise, avocado, ketchup, mustard etc.

Directions:

  1. Mix the vegetables, mushroom, seasonings, bread crumbs and egg together. Add in the turkey or chicken burger and mix by hand or with a large spoon until well mixed.

  2. Separate and roll mixture into 5 or 6 ~2 inch diameter balls, smooshing the mixture together as you roll. Use your hands to flatten it into a patty that’s ½ inch thick.

  3. Heat a pan over medium heat on a stovetop. Add vegetable or olive oil (optional). I’ve cooked these without oil on a nonstick skillet and they still turn out.

  4. Sprinkle salt and pepper on both sides of each patty. Fry them for ~3-4 minutes on each side, or until the internal temperature reaches 160°F. Add cheese and allow to melt, if using. Set aside burgers.

  5. Optional step (but recommended step): clean and reheat the same pan on low-medium heat. Cut a hamburger bun in half and spread mayonnaise/butter onto each side and place in a pan to toast on low heat. Once the bottoms look brown and lightly crisp, remove from heat and assemble your burgers.

  6. Serve with desire toppings and enjoy.

Assembling the mise en place! (Getting everything together before making the food).


Add all of the patty ingredients to the bowl except the turkey burger.


Mix those ingredients together before adding the turkey burger.


Add the turkey burger.


Mix in the turkey burger.


Now it's time to form a patty! Take a small piece of dough (about the size of a jawbreaker)


Roll the meat into a 2" wide ball, squishing it together as you shape it.


Then squish that ball into a patty shape that's 1/2 inch wide and sprinkle each side with salt and pepper.


Add the seasoned patties to a frying pan on medium heat (with or without oil) and cook 3-4 minutes on each side or until it reaches 160*F internally.


Using a meat thermometer to check the temperature is always recommended


The patties should look nice and brown when done. Add cheese if desired.


This step is optional, but I HIGHLY recommend toasting your buns. It just makes everything taste magical, although it is a little less healthy. Spread mayonnaise/butter on the open side of each half of a hamburger bun.


Toast the buns (mayo side down) on low heat until brown and crispy (see next photo)


Wonderfully toasted bun!
