Chicken Broccoli Alfredo (Italian-American)

Pasta always deserves dramatic lighting, and this pasta is no exception. Chicken alfredo is a nice, creamy, garlicky pasta that's a wonderful comfort food and not difficult to make. Also you can make this all in one pot!


If you want to try making homemade pasta noodles. (Keep in mind that fresh noodles take about 90 seconds to cook as opposed to dried store bought noodles)

Ingredients:

  • 1 Tbsp. Olive oil

  • 2 Tbsp. salted butter

  • 2 chicken breasts, diced

  • 4 cloves of garlic, minced

  • 2 Tbsp. all-purpose flour

  • 2-3 cups of dried pasta (Penne works well)

  • 1 head of broccoli, chopped into small pieces and florets

  • 2 14 oz. cans of chicken broth

  • 1 cup of shredded parmesan cheese

  • 1 cup of heavy cream

  • A pinch of ground nutmeg (optional)

  • Salt/pepper to taste

Directions:

  1. Melt butter and oil on medium heat in a large pot.

  2. Add chicken and fry until no longer pink.

  3. Add minced garlic and fry for 1 minute, stirring constantly.

  4. Add 2 Tbsp. flour and cook for 1-2 minutes, stirring constantly.

  5. Add 2 cans of chicken broth, bring to a boil.

  6. Add chopped broccoli and dried pasta and make sure they are submerged in the broth.

  7. Bring to a boil again. Then reduce heat to low-medium and let simmer for 20 minutes, adding more water/broth if needed to keep pasta/broccoli submerged (it is okay if not all pieces are submerged after 15 minutes).

  8. Turn off heat. Add Parmesan cheese, heavy cream and mix well. Add a dash of nutmeg and salt and pepper to taste.

  9. 4 servings.
