Vegetarian Reuben Sandwiches

It doesn't taste exactly like a reuben with corned beef, but it is a dang delicious substitute! Substituting the corned beef for sauteed mushrooms, onions, and spinach is still prey tasty and healthy for you as well! I'm sure you could play around with follings and get this to be the perfect vegetarian version you're looking for!



This recipe makes enough got 2-3 sandwiches. The recipe is here, and pictures of the process are below:


Ingredients:

  • 2-3 Tbsp. butter

  • 4 cups spinach or other green (chopped or whole) (140 g)

  • 1 cup thinly sliced onion (110 g)

  • 1 1/2 cup thinly sliced mushrooms (95 g)

  • Salt and pepper, to taste

  • 1/4 cup sauerkraut (drained) per sandwich

  • 1-2 tsp. of sour cream per sandwich (optional)

  • 2-3 slices Swiss cheese per sandwich

  • Pumpernickel bread

  • Butter for frying the sandwich


Directions:

  1. Melt the butter on medium heat in a pan. Add the onion and mushroom and cook about 5-10 minutes, until softened and browned.

  2. Add i the spinach and stir, cooking until it wilts and looses some moisture (about 3 minutes). Season with salt and pepper. Remove and set aside.

  3. Mix together the sauerkraut with sour cream (optional).

  4. Butter each side of the bread.

  5. Assemble your sandwich so he buttered sides face outward. The assembly is: bread-cheese-spinach filling-sauerkraut-cheese-bread.

  6. Fry on low-medium heat on each side (abou 5-8 minutes) with the pan covered. You want to cook it low and slow so the cheese melts and it's warm throughout. Adjust temperature as necessary.

  7. After the sides are cooked you can take the lid off and crisp up each side on medium heat.

  8. Serve fresh. You can include thousand island or Russian dressing if you prefer.

How to make it:

Before cooking the onions and mushrooms in melted butter (you can use oil if you'd like).


After cooking the mushrooms and onions until softened and browning.


Add the spinach.


After cooking the spinach. Then we'll season with salt and pepper and set aside.


How to assemble the sandwich:

First slice of bread, buter side down.


Then your first layer of cheese.


Some of your spinach mixture.


Then sauerkraut (mine is mixed with sour cream).


The last (second) layer of cheese.


And the last piece of bread (butter side up)!


Cover and begin cooking on low heat.


When one side is done flip and continue cooking.


And it's done! TIme to serve. Another plus is that I have enough leftover spinach filling for 2 more sandwiches!
