Roasted BBQ chicken thighs and potatoes

Roasted chicken is a delightful way to enjoy chicken. Less oil is used and the result is tender and delicious. Also, anything BBQ I'm all for, but you can modify with whatever spices or sauces you'd like.

Ingredients:

  • 4 chicken thighs (bone-in and skin on)

  • 4-5 small or 2-3 large red potatoes

  • Paprika

  • Salt

  • Pepper

  • Garlic powder

  • Cheese (optional)

  • Dried Basil

  • BBQ sauce (optional)

  • Oil

Directions:

  1. Place tin foil on a baking pan and oil lightly. Preheat oven to 425°F.

  2. Chop the potatoes into big 1-2 inch pieces and toss in oil. Season with Paprika, garlic powder, salt, pepper, Parmesan cheese, and basil (or desired seasonings). Place on pan.

  3. Season chicken (on both sides) with salt and pepper and desired spices. For BBQ chicken, season with salt, pepper, and paprika. Place on pan.

  4. Cook in oven for 30 minutes. Take out pan and use spatula to stir potatoes. Then brush BBQ sauce on both sides of the chicken.

  5. Bake everything for an additional 5-10 minutes. Use a fork to test if the potatoes are done (if it easily pieces through) and thermometer to check if the chicken is done (should be 160°F internal temperature).

  6. Then, brush more BBQ sauce on the chicken and turn the oven to broil. Put the chicken back in for 3-5 minutes (on broil) until the top starts to get crispy and edges get a little burnt.

  7. Serve with a side of vegetables.

  8. 4 servings.
