Pambazos de Papas con Chorizo (A Mexican Street Food Sandwich)



A spicy, filling, and messy sandwich I could eat any time of day! This sandwich blends a bread that's brushed with salsa and fried, amazing fried potatoes with chorizo, crunchy fresh ingredients, and spicy salsa and hot sauce. It is great as a hangover food or after a long day :) It's a little tricky to make but you can make the salsa and potatoes with chorizo ahead of time which really speeds everything else up!

Ingredients:

  • 3-4 Guajillo or New Mexico dried chilis

  • 1/4 of a white or yellow onion

  • 2 garlic cloves

  • 1/2 tsp. bouillon or salt

  • Papas con Chorizo / Potatoes with Chorizo (click for the recipe)

  • Pambazo bread or other store-bought sandwich bread roll

  • About 4-5 Tbsp. vegetable or canola oil for frying

  • Toppings (optional and you can use what you want): Sour cream or Mexican crema, cheese, lettuce, cilantro, salsa, hot sauce etc.

Directions:

  1. To make this recipe you should start by preparing the ingredients (cutting, chopping etc.), making the salsa that you will brush on the bread, then make the papas con chorizo, then fry the bread and assemble the sandwich!

  2. To make the salsa, remove and discard the stems and seeds from the dried chilis. Place the dried chilis, peeled garlic, and the 1/4 onion in a small pot, add some water but not enough to completely cover the ingredients.

  3. Bring to a boil on medium-high and let boil until soft, about 20 minutes. Remove from the heat and set aside about 5-10 minutes to cool.

  4. Use a fork or tongs to add the chilis, onion, and garlic into a blender. Add 1/2 tsp. salt or bouillon powder and 1-2 Tbsp. of the cooking liquid. Blend until smooth.

  5. Place the salsa in a container and set aside to cool. You can also make the salsa ahead of time and refrigerate until you use it (up to 5 days).

  6. Make papas con chorizo (click the link for the recipe, it only takes 20 minutes!)

  7. Cut your desired number of bread rolls in half, and generously brush the crusty side with salsa (see pictures below).

  8. Heat a non-stick pan on medium heat with about 1/8 inch (about 3-4 mm) of oil.

  9. Once the oil is hot (it should pop a little), add the bread, salsa side down, and fry for 30-60 seconds until golden. Use a spatula or tongs to check on it often.

  10. Once fried and crispy, set aside to cool.

  11. To assemble the sandwich, I recommend adding about 1/2 cup papas con chorizo, cheese and sour cream, cilantro, lettuce, salsa, and hot sauce (if desired).

  12. Enjoy!

  13. This recipe makes enough salsa for about 4-6 sandwiches. The papas con chorizo recipe should be doubled for 4 sandwiches.


The ingredients I used, I forgot to include oil in this picture! I know cotija or queso fresco cheese is more traditional than feta, but I could not find them here in Canada... This dry feta was a good switch though! But any cheese you like will work!


Prepare your chilis by removing the stems and seeds (left), throw them away but keep the skin (right).


Add the prepared chilis, the peeled garlic, and onion to a pan with some water.


Start boiling and boil until soft, about 20 minutes.


After boiling. Set aside to cool.


Once cooled slightly add the contents, some water, and some salt/bouillon to a blender.


And blend until smooth. It's done!


The finished salsa, you can cover and refrigerate it or use it immediately!

Once the papas con chorizo is made, start preparing the bread!


Slice your bread in half.


You will brush salsa on both sides that are facing upward.


After brushing with salsa.


Once your oil is hot (on medium heat), add the bread salsa side down and fry until brown and crisp (about 30-45 seconds). Do this for each sandwich.


Set the fried bread aside while you get all the toppings ready.


Time to make these sandwiches!


To assemble the pambazo sandwich, start with the bottom layer of bread, I added the papas con chorizo, cheese and sour cream/crema, cilantro, lettuce, salsa and/or hot sauce, and top piece of bread. Enjoy!
