Easy Mac & Cheese

Easy peasy mac & cheesy in all it's glory! An ultimate comfort food that's very customizable. It can easily be made on the stovetop with only a few ingredients! This recipe generates a very creamy and filling mac and cheese in about 20 minutes!

Ingredients:

  • 8 oz. dried macaroni pasta (~2 cups)

  • 2 tsp. salt for the pasta water

  • 1 Tbsp. salted butter

  • 1 Tbsp. all-purpose flour

  • 3/4 - 1 cup heavy whipping cream/half-and-half/milk

  • 1 1/2 cups of shredded cheese. Colby jack or cheddar work well. Also a mixture of cheddar and gruyere is nice.

  • 1/4 tsp. salt

Directions:

  1. Bring a pot of water with 2 tsp. salt to a boil. Then add in the noodles. Stir occasionally while boiling so they don't stick to the bottom of the pan.

  2. While the noodles are boiling you can start the sauce.

  3. In a separate pan/pot on low-medium heat, melt the butter.

  4. Then add the flour and whisk constantly for about 1 minute.

  5. Add the cream or milk and whisk continuously until it thickens (1-5 minutes).

  6. Once thickened remove from the heat and add the salt and half the cheese. Stir to combine.

  7. Then mix in the rest of the cheese.

  8. Taste the mixture to see if it needs more cheese/salt/cream (I usually add ~1/4 cup more cream).

  9. When the noodles are done cooking, strain and add them to the cheese sauce. Mix well to combine. Top with additional cheese before serving (optional).

  10. Best eaten fresh, but can be refrigerated up to one week.

  11. Makes two 1.5 cup servings or one 3 cup serving (fits in a large bowl as seen above.)


Boiling noodles.


Then in a separate pot melt the butter and add the flour, cook for about 1 minute before adding the milk and/or cream.


After adding the cream to the butter and flour mixture. Cook and stir until it thickens.


After it has thickened. Then remove it from the heat.


Add in the cheese, one half at a time. Also add in the salt.


After whisking the cheese in. Nicce and silky and thick.


After adding the noodles but before mixing them in!


Once everything is mixed together it can be served up with additional cheese! Absolutely divine!
