Kimchi Fried Rice

This spicy, tangy, acidic, vibrant red, and flavor-packed fried rice that is a great meal with some fried eggs! You should definitely try this if you're a fan of kimchi. Otherwise it would make a good side dish if you want something to brighten up your meal! It comes together very quickly.


My recipe is based on Maangchi's recipe: https://www.maangchi.com/recipe/kimchi-bokkeumbap I added sugar, soy sauce, and garlic to balance out the intense Kimchi flavor, but you can omit these.

Ingredients:

  • 1-2 tsp. vegetable oil

  • 1/2 cup kimchi (105 g)

  • 1 clove garlic, minced

  • 1 green onion, sliced

  • 1 1/2 cups cooked leftover rice (220 g)

  • 2 Tbsp. kimchi juice

  • 2 Tbsp. water

  • 1/2 tsp. sugar

  • 1 1/2 tsp. lite soy sauce

  • 1 Tbsp. gochujang (Korean pepper paste)

  • 1 tsp. toasted sesame oil

  • 1-2 eggs

  • Garnish (optional): green onion, chopped and roasted sesame seeds

Directions:

  1. Cut the kimchi into small pieces with scissors (better to do this in a bowl, it tends to stain cutting boards).

  2. In a small bowl mix together the kimchi juice (from the kimchi container), water, sugar, soy sauce, and gochujang. Set aside.

  3. In a non-stick pan heat heat the oil on medium heat. Add the kimchi, sliced white part of the green onion, and minced garlic, sauté for 1 minute.

  4. Add in the rice and spicy sauce and stir until combined. Fry for about 5-7 minutes, stirring regularly.

  5. Then stir in the toasted sesame oil. Take off the heat.

  6. Taste and adjust seasoning if necessary.

  7. Note: while the rice is frying you can fry the eggs in a little butter or oil, if using. Alternatively you can scramble the eggs in the same pan as the rice.

  8. Serve with fried eggs. Top with the sliced green part of the green onion and sesame seeds, if desired.

  9. 1-2 servings.


The ingredients I used. Adding green onion to this is also a great idea!


Prepare your ingredients. Make a sauce from the spices and soy sauce and chop up the kimchi into small pieces. Now time to cook!


Add oil, garlic, and kimchi to a heated pan. Note: I recommend adding the white part of a green onion (sliced) at this stage as well!


After cooking about 1 minute.


Then add the rice and sauce mixture and fry about 5-7 minutes. I start frying my egg at this time.


After frying about 5-7 minutes.


Mix in the sesame oil and it's ready to serve! I told you it was fast :)
