Egg Salad Sandwiches



A simple American lunch or dinner you can prepare with just a few ingredients! It's creamy, tangy egg salad you can eat by the spoonful. I think I make it differently every time, but here is a general recipe, you can adjust the ingredients to your taste, and even add things like green onion, celery etc. to jazz it up!

Ingredients:

  • 6 large hard-boiled eggs

  • 1/4 cup mayonnaise (~60 g)

  • 3-5 tsp. yellow mustard (21-35 g)

  • Salt and pepper, to taste

  • 1 tsp. lemon juice (optional)

  • 1/4 tsp. sugar (optional)

Directions:

  1. Prepare a bowl or container or ice water.

  2. Bring a pot of water to a boil on medium heat and add 6 eggs and some salt (helps trap egg whites if an egg cracks). Add the eggs and let boil 15-20 minutes.

  3. Once boiled, drain the pot and add the eggs to the ice water. Refrigerate until chilled, at least one hour.

  4. Peel the eggs and slice or mash them to your desired texture.

  5. Add the mayo, mayonnaise, salt and pepper and mix together. Taste and adjust seasoning. You may need more or less of what you see listed in the ingredients.

  6. Use immediately or chill.

  7. Serve on white or whole wheat bread.

  8. Makes 2-3 sandwiches.


The essential ingredients, although you can omit the black pepper.


Peel the hardboiled eggs. Then you can slice or mash them into your desired size.


After mashing (I don't have an egg slicer but normally I would slice them).


Then add your ingredients.


And mix together! Taste and adjust the flavors as necessary.


Then assemble your sandwiches!


And enjoy! Remember that you can add things like green onion, celery, and anything you'd like!
