Cinnamon Raisin Granola

The combination of cinnamon, raisins, coconut, and sweeteners make this granola crunchy and flavorful! It is healthier than traditional store bought granola and full of fiber to really get you going.


Ingredients:

  • 1 ½ cup old fashioned oats

  • ½ cup roughly chopped nuts (any will work, but untoasted may work better)

  • 1/3 unsweetened shredded coconut

  • ½ cup ground flax seeds (optional)

  • 1/2 tsp. salt (only if nuts are unsalted)

  • 1/2 tsp. ground cinnamon

  • 1/4 cup honey or maple syrup

  • 2 Tbsp. melted coconut, vegetable, or canola oil

  • 1 tsp. vanilla extract

  • 1 large egg (or 2 egg whites)

  • 3/4 cup raisins

Directions:

  1. Preheat oven to 300°F. Prepare a large baking pan with parchment paper.

  2. Mix everything together and adjust ingredients as desired.

  3. Spread evenly on pan. Bake for 20 minutes, take out, mix the granola around a bit, and bake for another 15 minutes or until it is dry to the touch.

  4. Let granola cool completely and store in airtight container at room temperature for up to 2 weeks or in freezer for up to 2 months.

  5. Makes about 3 cups. Great with yogurt, as is, or with milk as homemade cereal.
