Cilantro-Lime Rice (Chipotle Burritos)

This amazing recipe yields soft and light rice that's packed with fresh flavor from the lime juice, lemon juice, and cilantro. I recommend you try it in your burritos!


Ingredients:

  • 1 1/2 cups long grain rice (white or brown)

  • 1 bay leaf

  • 2 1/4 - 3 3/4 cups water (depending on rice variety)

  • 2 Tbsp. olive oil, or avocado oil

  • 1/2 to 3/4 tsp. salt (or to taste)

  • 1/3 to 1/2 cup finely chopped cilantro

  • 1 Tbsp. fresh lime juice (or to taste)

  • 1 Tbsp. fresh lemon juice (or to taste)


Directions:

  1. Rinse the rice and drain the water. Repeat rinsing until the water runs clear (the rinsing helps the rice remain fluffy after cooking).

  2. Add the rinsed rice, bay leaf, and the amount of water specified on the rice packaging to a saucepan or medium sized pot.

  3. Bring to a boil.

  4. Cover the pot and reduce the heat to low. Simmer for 5-50 minutes (time listed on rice package). Taste to tell when it's cooked through if you're unsure.

  5. Take the pot off the heat. Remove the bay leaf and cover the rice, letting it rest for 10 minutes. Then mix in the oil.

  6. Add the rice to a mixing bowl and mix in the cilantro, lime juice, lemon juice, and salt. Taste and adjust seasonings as needed.

  7. Serve hot, or at room temperature. Cover and refrigerate leftovers for up to one week, if it loses the fresh taste, add more cilantro and lime juice after reheating.

  8. Makes 8-12 servings.


Add the rice, water, and bay leaf to a pot. Then bring up to a boil.


It has come to a boil, so now time to reduce to simmer, cover, and simmer for recommended time (since I'm using brown rice it's 30-50 minutes).


Covered the rice and let it simmer.


Rice is done cooking! Now to take out the bay leaf and let it cool for ~10 minutes.


After cooling the rice I added in the oil, lime juice, lemon juice, cilantro and salt (to taste).
