Chinese-Style Peanut Noodles

These delicious noodles are not only very easy to make (<10 minutes and one pot), but they are extremely filling and packed with rich and savory flavors. There's the richness of the peanut butter balanced by the saltiness of the coy sauce and the tang of the vinegar. They're very easy to make and feel free to play around with the ingredients!



The recipe is here, and pictures of the process are below:


Ingredients:

  • 8 oz. ramen noodles, other Asian noodles, or pasta noodles (227 g)

  • 1/4 cup smooth or chunky peanut butter (66 g)

  • 1/4 cup low sodium soy sauce (58 g)

  • 1 tsp. sesame oil (4 g)

  • 2 Tbsp. brown sugar or honey (~22 g)

  • 1 Tbsp. rice vinegar (14 g)

  • 2 minced garlic cloves

  • 1/2 tsp. minced ginger (or 1/4 tsp. ground ginger)

  • 1 tsp. chili paste or flakes (optional)

  • 1/3 cup water (80 g)

  • Optional but recommended: Vegetables or a protein source

Directions:

  1. Mix together the peanut butter, soy sauce, sesame oil, sugar, vinegar, garlic, ginger, chili paste and water. Set aside.

  2. Boil noodles as per package directions and strain.

  3. In the same pot add the sauce and stir. Once simmering or lightly boiling, remove from the heat and add the noodles and other additions (e.g. vegetables or meat) and stir to combine.

  4. The sauce may be thick so you can gradually add more water to thin it out. Serve hot and fresh, and if you want them to taste like Thai noodles serve with fresh lime or lime juice.

  5. 2-4 servings.


Here's how I made a single serving (half the recipe):


The ingredients I used. I also added some edamame and peas, as well as some toppings.


Mix together the sauce and set aside.


Prepare the noodles.


Once cooked strain the noodles.


In the same pot the noodles were cooked in add the sauce and bring to a light boil.


Then take off the heat and mix in your noodles and other add-ins. That's it!
