That delicious, savory, warm spice mix that is perfect for noodles, meat marinades, vegetables, and even tofu! Sure you can buy it from the store, but if you want to be extra fancy you can make it at home! Honestly it tastes great either way! Obviously it has five spices, some of which can be difficult to find if you don't live near any Asian markets, but some of these spices can also be used in other cuisines, such as Indian cooking (Cinnamon, cloves, star anise), German baking (Cinnamon, star anise), Italian cuisine (fennel seed).

Ingredients:
10 g whole pink Szechuan peppercorns
10 g whole star anise
5 g fennel seeds
5 g cinnamon stick
4 g whole cloves
Directions:
Add all the whole spices/seeds to a pan on low-medium heat. Toast for about 2-5 minutes while stirring, until fragrant (don't let them burn!)
Remove from the heat.
Break up the cinnamon stick and star anise into smaller pieces and grind until fine using a spice grinder or coffee grinder (or mortar and pestle).
Add the rest of the whole spices and grind until finely ground. Sift to remove larger pieces, if desired. You can re-grind larger pieces but some waste is okay.
This recipe makes about 1/3 cup of the spice mixture. Store in an airtight container for up to 1-2 years.

Add them to a dry pan and toast while stirring.
After toasting.
First break up the star anise and cinnamon stick and add to a spice grinder.
And grind!
Then add the rest of the spices.
And grind until finely ground!
If you still have larger pieces you can sift it.
After sifting (honestly if you have this little leftover you might as well throw it in :)
And it's ready!!!
Add it to a good, airtight container, cap, and store!
