Chili Oil Fried Rice

This is some top-notch fried rice. A super simple but amazing recipe. Takes 5-10 minutes to make and even less time to devour. It's a little salty, spicy, rich, and just really tasty. I really recommend you try this recipe! Feel free to serve it up with veggies or protein.

Ingredients:

  • 1 Tbsp. oil or butter for frying (I use butter)

  • 2 large eggs

  • 2 thinly sliced green onions (optional)

  • 1 Tbsp. oyster sauce or vegetarian oyster sauce

  • 2 tsp. light soy sauce

  • 1 tsp. white sugar

  • Pinch of black pepper

  • 1 1/2 cups leftover cold rice

  • 1 Tbsp. chili oil (mostly scoop out the chilis, not too much oil)

Note: Lau Gan Ma chili oil works very well for this dish.


Directions:

  1. Begin melting the butter or oil on medium heat in a nonstick skillet.

  2. Add the green onion and eggs. Scramble the eggs as they cook.

  3. Once the eggs are half-way cooked add the oyster sauce, soy sauce, sugar, and black pepper.

  4. Add the rice and mix well.

  5. Fry about 1-2 minutes.

  6. Then add the chili oil and fry an additional 1-3 minutes.

  7. Taste for seasoning and adjust. Serve!

  8. This recipe makes 2 servings.
