This is some top-notch fried rice. A super simple but amazing recipe. Takes 5-10 minutes to make and even less time to devour. It's a little salty, spicy, rich, and just really tasty. I really recommend you try this recipe! Feel free to serve it up with veggies or protein.

Ingredients:
1 Tbsp. oil or butter for frying (I use butter)
2 large eggs
2 thinly sliced green onions (optional)
1 Tbsp. oyster sauce or vegetarian oyster sauce
2 tsp. light soy sauce
1 tsp. white sugar
Pinch of black pepper
1 1/2 cups leftover cold rice
1 Tbsp. chili oil (mostly scoop out the chilis, not too much oil)
Note: Lau Gan Ma chili oil works very well for this dish.
Directions:
Begin melting the butter or oil on medium heat in a nonstick skillet.
Add the green onion and eggs. Scramble the eggs as they cook.
Once the eggs are half-way cooked add the oyster sauce, soy sauce, sugar, and black pepper.
Add the rice and mix well.
Fry about 1-2 minutes.
Then add the chili oil and fry an additional 1-3 minutes.
Taste for seasoning and adjust. Serve!
