These are the tastiest vegetarian burritos I have made. They taste practically identical to my mom's Tex-Mex burritos and only take ~20 minutes to make. Unbelievable! You can replace the vegetarian "meat" with real meat.

If you want to make your own taco seasoning, click on this recipe: Quesadillas

The ingredients are here, and pictures of the process are below

Ingredients:

  • 3/4 lb. (340 g) vegetable mince product or 1 lb. ground beef

  • 1/2 large onion, finely diced (about 1 1/2 cup)

  • 1 small bell pepper diced

  • 1-2 packages taco seasoning

  • ~3 Tbsp. vegetable oil (optional if using meat)

  • Tortillas, cheese, lettuce, sour cream, or whatever you want

Directions:

  1. Heat the oil on medium heat. Add the onions and bell pepper and sauté about 5-8 minutes.

  2. Add the meat/vegetable mince, break it apart, and fry 5-10 minutes (if cooking meat it is fully cooked when it is no longer pink and drain off excess fat if desired).

  3. Add the taco seasoning and 2/3 cup water. Mix in. Bring to a light boil and then reduce to a simmer and simmer about 5 minutes while stirring.

  4. It's ready! I like to assemble my burritos as shown below.

  5. Makes 3-4 servings.

These are the products I used and their ingredients. Maybe not the healthiest (especiall the seasoning, but... it tastes good!

Before frying the onions and bell pepper.

After frying the onions and bell pepper. Now we add the protein and fry:

After cooking the vegetable mince and adding the seasonings and water. Then we mix it together and cook that down and it's done!

Aaaand it's done! That was fast!

And we can assemble our burritos!
