BBQ Pulled Mushroom Sandwiches

A delightful and delicious BBQ experience! This sandwich is rich, smoky, sweet and salty, and a little spicy! This sandwich is similar to a BBQ pulled pork sandwich. The mushrooms have a similar texture but are not quite as chewy and fibrous as real pork. It's also a lot easier and faster to mak ethan real pulled pork. It's missing the fattiness of the real deal, but it's still quite good!



Ingredients:

  • 3 large oyster mushrooms

  • 1/2 cup red onion, diced

  • 1-2 Tbsp. oil

  • 2 garlic cloves, minced (about 1 tsp.) (or 1/2 tsp. garlic powder)

  • 1/2 tsp. paprika

  • 1/4 tsp. cayenne pepper (optional)

  • Salt

  • Pepper

  • 1/4 to 1/2 cup BBQ sauce


Directions:

  1. Preheat the oven to 400°F.

  2. Shred the mushrooms using two forks or your hands.

  3. Mix the mushrooms with the other ingredients (and only ~2 Tbsp. BBQ sauce).

  4. Bake for 20 minutes.

  5. Then remove from the oven and mix in the remaining BBQ sauce, as much as you'd like. Then broil for 1-4 minutes, or until it's crispy and delicious looking. This gives it a lovely flavor and helps with caramelization of the BBQ sauce.

  6. Serve!

  7. I like to serve it on a bun that's wither buttered or coated with mayo and toasted. For condiments I like a bit more BBQ sauce (don't overdo it) and mayo. Simple but delicious.

  8. Makes 2 large sandwiches.
