Avocado Pasta

I know, sounds like a crazy millennial idea. But it only takes 10 minutes to make and it absolutely fricken' WORKS. It's creamy, savory, and bright in flavor. The avocado is the fanciest part, the other ingredients are typical.


Ingredients:

  • 4 cups dry pasta (preferably small noodles)

  • 2 tsp. salt (for pasta water)

  • 1 ripe avocado

  • 2 Tbsp. lemon juice

  • 1/2 tsp. salt

  • 1/2 tsp. coarse black pepper

  • 1 tsp. dried basil

  • 1-2 minced garlic cloves

  • 2 eggs


Directions:

  1. Bring a pot of water with 2 tsp. salt up to a boil. Boil pasta as directed.

  2. While the pasta is boiling, mash the avocado with the lemon juice, salt (1 tsp.), pepper, basil, and garlic. Then mix in the eggs until completely combined.

  3. When the pasta is cooked, drain it and return to the pot. Mix in the avocado sauce until well combined. Mix quickly so the eggs don't scramble.

  4. You can add in additional things like roasted tomato, chicken, or other veggies.

  5. Taste for seasoning, adjust (if necessary), and then serve immediately. I'm not sure if this keeps in the fridge since avocados can quickly oxidize.

  6. 2-4 servings.


You start with your simple ingredients (I'm only making a half batch here).


After mashing together the avocado, salt, pepper, lemon juice, and basil. Then we'll mix in the egg.


After mixing in the egg, the mixture should become looser.


Boil the noodles in salted water and then drain. Quickly mix in the avocado sauce over low heat. And you're done!
