Almond Butter Granola

This is an easy granola to make that's packed with fiber and great for almond lovers out there.

Ingredients:

  • 2 cups old fashioned oatmeal (or 1.5 cups and 1/2 cup chopped almonds)

  • ¼ tsp salt (only if using unsalted nuts)

  • ¼ cup natural almond butter*

  • 1/4 tsp. cinnamon

  • ¼ cup honey/maple syrup

  • ½ tsp. vanilla extract

Directions:

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.

  2. Mix dry ingredients in a medium sized bowl.

  3. Place maple syrup and almond butter in a microwave safe bowl and warm for 30-60 seconds until it’s warm enough to stir everything together. Then mix in vanilla.

  4. Add the wet ingredients to the dry ingredients and mix well.

  5. Spread over parchment paper and bake for 20 minutes, stirring the granola halfway through.

  6. Let cool 1 hour before storing. Keeps for ups to 2 weeks in airtight container at room temperature.

  7. Note: If you want less-sweet granola, lessen the amount of maple syrup and add more peanut butter (if desired).

  8. This granola goes well with almond milk like a breakfast cereal.
