Çılbır (Turkish Poached Eggs)

Okay, you're probably thinking yogurt, raw garlic, chili flakes, butter, and eggs don't go well together.... Well I hope I can prove you wrong! This is an incredible flavorful dish that is a perfect breakfast/brunch/dinner option. It is really, really good (but it will give you garlic breath!) FYI, Çılbır is pronounced "chilbir." Also, I know these are poached eggs but it tastes much better if they're fried! Plus you only use one pan!


This recipe serves 1 person,and pictures of the process are below:


Ingredients:

  • 1 large garlic clove, finely minced (about 1/2 tsp.)

  • 1/2 cup (120 g) of 2% greek yogurt (Oikos brand is good)

  • 2 eggs

  • Salt

  • 2-3 Tbsp. butter

  • 1 heaped tsp. Chinese chili flakes/aleppo pepper flakes

Directions:

Garlic note: Before mincing the garlic, cut it in half and remove the long stem-thing/shoot in the middle (if it's present). This shoot makes the garlic taste bitter.


  1. Heat your serving bowl(s) in a microwave until hot to the touch. Place your minced garlic inside (this cooks the garlic a little).

  2. Then pour your yogurt over the garlic, add 2 pinches of salt, and mix together.

  3. Fry the eggs (recommended): Fry two eggs over-easy (white cooked, yolk still runny) in about 1 Tbsp. butter, put on top of the yogurt. Toast the bread while you fry the eggs!

  4. Poach eggs (not recommended): Heat a pot of water until boiling. Add in your eggs and reduce to a simmer. simmer 4 minutes (the video tutorial below shows how to do this very well). Then strain well and add on top of the yogurt.

  5. Melt 1-2 Tbsp. butter in a small pan (can use the same egg-frying pan) on low-medium heat. When it's foamy add in the chili flakes. Mix and cook another 30-60 seconds. Take off the heat and pour over the eggs & yogurt.

  6. Serve with plain toast.


I heated the bowl in the microwave for 3 minutes and mixed together the yogurt, minced garlic, and salt. Set aside.


So, i know it's poached eggs, but I fry my eggs in a little butter instead. I've tried poached too but fried is SO much better.

Toast the bread while you cook the eggs!

Place the eggs on the garlic yogurt. Next we'll make the chili butter and it will be ready to eat!


Melt the butter until foamy. Then add in the chili flakes


Swirll and cook the flakes about 30-60 seconds.


Then pour the chili butter over the eggs! I cracked the yolks for more color.


Serve with toast. Done!!!! Enjoy!


Note: If you have crazy garlic breath afterward try brushing your teeth, once with toothpaste and 2 times more with baking soda. Works decently well.
