White Chocolate Cranberry Cookies

These cookies are deliciously sweet, buttery, and a little bit tart. For me it's a perfect combination!!! I ate far too many and felt sick afterwards...I really lack self control with white chocolate cookies :) Note: If you want to make these less sweet look for reduced sugar or unsweetened cranberries to better contrast the sweetness of the white chocolate.


The recipe is here (feel free to double it!), and pictures of the process are below:


Ingredients:

  • 1 1/4 cups all purpose flour (182 g)

  • 1/2 tsp. baking soda (2 g)

  • 1/4 tsp. salt (1.5 g)

  • 1/2 cup salted butter, softened (113 g)

  • 1/4 cup + 2 Tbsp. packed light brown sugar (67 g)

  • 1/4 cup white sugar (51 g)

  • 1/2 tsp. vanilla extract (2 g)

  • 1 large egg (~55 g)

  • 1/2 cup white chocolate chips (90 g)

  • 1/2 cup dried cranberries (I used sweetened) (72 g)

  • 1/3 cup oatmeal (optional) (33 g)

Directions:

  1. Preheat the oven to 350°F.

  2. Mix together the flour, baking soda, and salt in a bowl and set aside.

  3. In a large bowl whisk or beat the butter until light and creamy.

  4. Add the sugars to the butter and keep mixing on medium to high speed until very light and fluffy (about 5 minutes).

  5. Add the egg and vanilla and mix in thoroughly.

  6. Gently fold in the dry ingredients (flour etc.) just until combined.

  7. Add the cranberries, white chocolate, and oatmeal if using and fold in until combined.

  8. Roll or spoon about 1 1/2 Tbsp.-sized dough balls onto a lined or greased baking sheet, spacing about 2 inches apart. Bake for 11-12 minutes, they should just barely be golden.

  9. Wait a few minutes before removing from the pan to cool completely.

  10. Best eaten the day they are baked, but you can store them in an airtight container for up to 5 days, or freeze after baking.

  11. 20-24 cookies.

They look very pale, but trust me, if you have a sweet tooth you might just love these!!!
