This vegetarian Thanksgiving dinner of "sausage" stuffing, mashed potatoes and amazing gravy, buns, and veggies holds its own as a very tasty and filling meal. There certainly is a lot of butter in these recipes but it's totally worth it!!! The gravy especially can fool anyone into thinking it's made for meat eaters.

Mashed Potatoes:
Ingredients:
2-3 large russet potatoes, peeled and cut into large chunks
1/2 to 1 stick of salted butter (4-8 Tbsp.)
1/4 to 1/2 cup milk or cream
Salt
Pepper
Directions:
Cover the potatoes with water in a large pot. Bring to a boil and boil gently for 15-20 minutes or until easily pierced with a fork.
Strain the potatoes and mash. Add and mix in in butter, milk, salt, and pepper until desired taste and texture. Serve with gravy.
Vegetarian Gravy:
Ingredients:
1 Tbsp. butter
1/2 cup finely diced onion
4 Tbsp. butter
1/4 cup (4 Tbsp.) flour
2 cups vegetable broth (can make with bouillon cube)
2-3 tsp. soy sauce
Black pepper, to taste
Directions:
Melt 1 Tbsp. butter in a saucepan. Add the onions and cook on low-medium heat for 10-15 minutes.
Remove the onions and set aside.
Melt 4 Tbsp. butter in a pan. Add the flour, and whisk for 3 minutes, cooking on medium-low heat.
Slowly add the vegetable broth and cook until thickened. Add the onions back in.
Stir in soy sauce and black pepper to taste and additional salt if necessary.
Gravy:
Onions before frying in 1 Tbsp. butter.
After frying, the pic is a bit blurry... Then you take them out, put them to the side, and continue.
After melting the 4 Tbsp. butter and adding 1/4 cup flour. Now we stir and cook 3 minutes.
After cooking 3 minutes. Then we slowly pour int he broth and cook until thickened.
And it's done! We're good to go!
