Vegetarian Sausage Gravy

To any non-Americans, this recipe may seem weird. But it's not to us! It's a peppery, savory gravy often served with famous buttermilk biscuits (also a very American thing). I used some store-bought sausage to make this, and although I don't recommend eating the processed fake meat all the time, this recipe really, really hits the spot! It's honestly one of my comfort foods so I was so happy I could make it vegetarian!


FYI: if using real pork sausage the process is pretty much the same.

Ingredients:

  • 220 g/1/2 lb. Tofurkey Beer Brat "Sausage"

  • 4 Tbsp. butter

  • 2 Tbsp. flour

  • 1 1/2 - 2 1/2 cups milk (~350-475 mL)

  • Salt

  • Black pepper, coarsely ground

Directions:

  1. Crumble/tear the sausage into small pieces.

  2. Melt the butter in a saucepan. Add the flour and stir, cooking for 1 minute.

  3. Add the "sausage" and fry about 5-10 minutes, stirring regularly until it's about 50% browned and crispy.

  4. Add 1 1/2 cup milk. Stir, cooking until it thickens (~5 minutes).

  5. Then add in salt and pepper to taste. Traditional sausage gravy uses a lot of black pepper.

  6. If it gets too thick thin the gravy with additional milk.

  7. Serve over biscuits/toast with eggs. This combination is savory, rich and fantastic!

  8. Makes ~3 cups.


Crumble the sausage into small bits.


Melt the butter and add the flour.


Mix and cook the flour about 1 minute. This will thicken the gravy.


And the sausage and cook about 5 minutes, stirring.


After cooking 5 minutes. Note: You should cook this longer so it's more brown and crispy than what's pictured here.


Add the milk and cook until thick. Add more milk if it gets too thick.


After cooking.


Serve over some delicious biscuits or with other savory breakfast foods!!!
