This vanilla frosting recipe is perfect, and you can use vanilla beans/vanilla extract/vanilla bean paste, whichever works. It's not overly sweet or gritty like some frostings. it's delicate and creamy and amazing.
The recipe is here:
Ingredients:
3 cup powdered sugar, sifted
1 cup (2 sticks) unsalted butter room temperature
4 teaspoons vanilla bean paste/pure vanilla extract (or seeds from 1 vanilla bean + 2 tsp. extract)
1-2 tablespoons milk
Directions:
In a stand mixer with a paddle or spatula-paddle attachment (or with a hand mixer), mix together sugar and butter until they are blended and creamy (1-2 minutes).
Add vanilla bean paste and milk and continue to beat for another minute until smooth but thick (see picture below).
If desired, add more vanilla bean paste to taste, or more powdered sugar to make it stiffer.
Enough frosting for 24 cupcakes or one cake.
This is what the frosting looked like after mixing.
