Vanilla Bean Frosting

This vanilla frosting recipe is perfect, and you can use vanilla beans/vanilla extract/vanilla bean paste, whichever works. It's not overly sweet or gritty like some frostings. it's delicate and creamy and amazing.

Ingredients:

  • 3 cup powdered sugar, sifted

  • 1 cup (2 sticks) unsalted butter room temperature

  • 4 teaspoons vanilla bean paste/pure vanilla extract (or seeds from 1 vanilla bean + 2 tsp. extract)

  • 1-2 tablespoons milk


Directions:

  • In a stand mixer with a paddle or spatula-paddle attachment (or with a hand mixer), mix together sugar and butter until they are blended and creamy (1-2 minutes).

  • Add vanilla bean paste and milk and continue to beat for another minute until smooth but thick (see picture below).

  • If desired, add more vanilla bean paste to taste, or more powdered sugar to make it stiffer.

  • Enough frosting for 24 cupcakes or one cake.
