Tomato & Egg Stir-fry (番茄炒蛋)




A simple, cheap, and healthy Chinese recipe using fresh ingredients. The eggs are soft and fluffy and perfectly complemented by the richness, sauciness, and the natural MSG of the tomatoes. They go splendid together! A little bit of seasonings and green onions compliment the flavors beautifully. This is great as a side dish or breakfast!



Feel free to modify the amount of tomatoes and eggs based on your preference!


Ingredients:

  • 2 Tbsp. vegetable or peanut oil

  • 5 large eggs, whisked well

  • 3 whole medium tomatoes, cut into 1/2 to 1 inch pieces

  • 1/2 tsp. salt

  • 1/4 tsp. sugar

  • 2 green onions, sliced into 1 inch pieces

  • 1/2 tsp. cornstarch mixed with a little water (optional)

  • Rice for serving (optional)


Directions:

  1. Prep all the ingredients ahead of time because this recipe comes together very quickly.

  2. Heat a wok or non-stick pan on medium high heat. Add 1 Tbsp. oil.

  3. Add in the tomatoes, salt, and sugar, and fry about 2-3 minutes, or until softened and liquid reduces by half.

  4. Then add the green onions and cook 1 minute.

  5. Stir in the cornstarch slurry nad mix in until the tomato sauce thickens.

  6. Set tomatoes aside in a bowl and quickly clean the pan.

  7. Bring back up to medium-high heat. Add 1 Tbsp. oil and fry and stir the eggs about 1-2 minutes, or until mostly cooked but still fluffy and soft.

  8. Take off the heat. Stir in the tomato sauce and break up the eggs until they are the desired size.

  9. Serve!


Prep everything beforehand. Trust me!


Starting to cook the tomatoes with the salt and sugar in oil.


After cooking the tomatoes. They're quite saucy. If yours are dry try adding some water.


Then we'll add the green onion and cook for about 1 minute.


Once the green onion is soft I added the cornstarch slurry and it's thickened. So it's ready to set aside!


Set aside the tomato sauce and clean the pan so we can get ready to cook the eggs!


Begin frying the eggs. They'll cook very fast!


They're still a little soft but it's time to take off the heat and ad the tomato sauce. They'll keep cooking!


Mix in the tomato sauce and it's done!


Pretty and ready to eat!
