Cheesy Skillet Potatoes with peppers and onion

An easy breakfast side dish (or main dish if preferred). Just some delicious seasoned fried potatoes with onion and bell pepper. What's not to love?


The recipe is here and pictures of the cooking process are below.


Ingredients:

  • 2 tbsps. olive oil or vegetable oil

  • 1 tbsp. butter

  • 2 large (3x4 inch) red potatoes (NOT RUSSET POTATOES), cut into ½” cubes

  • 1 onion, diced

  • 1 red bell pepper or ½ red bell pepper and ½ green bell pepper, diced

  • Garlic powder, to taste

  • Onion Powder, to taste

  • Paprika, to taste

  • Ground ginger, to taste (optional)

  • Fajita seasoning, to taste (optional)

  • Salt and pepper, to taste

  • Shredded cheese, either parmesan, cheddar, Colby jack, or pepper jack cheese


Directions:

  • Preheat the oil and butter in a large nonstick skillet over medium heat. Add potatoes, toss to coat with oil, and place a lid on the pan. Allow the potatoes to cook covered for 10 minutes (stirring occasionally).

  • Remove the lid and increase the heat to medium high. Add onion and bell pepper. Add seasonings. Cook for 5-15 minutes, stirring occasionally, until the potatoes and vegetables turn golden brown (taste to check if it's done).

  • Sprinkle with your choice of shredded cheese and serve immediately.

  • 3-4 servings


Melt the butter and oil in a pan.


Add the potatoes and toss in the oil+butter.


Then cover with a lid (pan in my case) and cook for 10 minutes (stirring occasionally).


After 10 minutes the may look something like this.


So then you'll want to add in all your seasonings, onions, mix in.


Cover again and cook for 5-15 minutes, or until everything is softened (taste it to see).

Then just top with cheese and enjoy!
