Sourdough Peanut Butter Cookies

I have definitely eaten too much sugar lately. Diabeetus may soon be upon me. But these cookies are nice, fluffy, and peanut buttery. The inclusion of sourdough doesn't affect the flavor significantly, but I think it does add to the texture. The reason I added the glaze drizzle on top is because they didn't taste enough like peanut butter...I seriously love peanut butter.



Ingredients:

  • 1/2 cup smooth/chunky peanut butter, natural if possible (120 g)

  • 1/2 cup butter, softened (56 g)

  • 1/2 cup brown sugar (90 g)

  • 1/2 cup sourdough starter (120 g)

  • 1 egg

  • 1/2 tsp. vanilla extract

  • 1 cup flour (150 g)

  • 1/2 tsp. baking powder (omit for a flatter, less cakey cookie)

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 1/2 cup chocolate or peanut butter chips or chopped peanuts (optional)

  • Sugar for topping, if desired

Drizzle Topping (optional):

  • ~1/3 cup peanut butter chips

  • ~1-2 Tbsp. milk


Directions:

  1. Preheat the oven to 350°F.

  2. Beat the butter, brown sugar, vanilla, and peanut boutter together until combined and smooth with a rubber spatula or spoon.

  3. Then add in the egg and sourdough starter and mix until combined.

  4. Then in a separate bowl combine the flour, baking powder, baking soda, and salt together (dry ingredients).

  5. Add half the dry ingredients to the wet, and fold in. Then fold int he rest of the dry ingredients. Mix in chips if using.

  6. Roll dough into 1 1/4 (3.5 cm) balls, place on lined baking tray, and crosshatch with a fork. Sprinkle the tops with sugar, if desired.

  7. Bake 10-12 minutes. Let cool 3 minutes on the pan before moving to a rack/clean surface to finish cooling.

  8. If making drizzle, melt chips and milk together in a microwave about 20-30 seconds. Stir well and drizzle over cooled cookies. Leave to set.

  9. Yields 18-20 cookies
