Russian Teacakes

Soft and addicting little snowballs. These Russian teacakes, also called Mexican wedding cakes, are a perfect Christmas cookie! They only have 5 ingredients and are super easy to make!


The recipe is here, and pictures of the process are below.


Ingredients:

  • 1 cup softened salted butter

  • ½ cup sifted powdered sugar and additional for rolling

  • 1 tsp. vanilla extract

  • 2 ¼ cup flour

  • 1 cup finely chopped walnuts or pecans

Directions:

  1. Mix butter, powdered sugar, vanilla thoroughly (about 2-5 minutes).

  2. Then sift in flour and stir into wet ingredients and mix until a dough forms (it will be a little dry.

  3. Mix in nuts.

  4. Roll into 1-inch balls and place on ungreased sheets or baking sheets lined with parchment paper.

  5. Bake 10-12 minutes in 400°F oven until set but not brown (the bottoms will be lightly golden brown).

  6. Remove from the pan and let cool 10-15 minutes, and then roll in powdered sugar to coat.

  7. Makes 4 dozen.

After rolling the cookies into balls. Now it's time to bake.


After baking! Once they cool a little you can roll them in powdered sugar.
