Peanut Butter Granola

I love peanut butter. It is amazing and cramming it into desserts, breakfasts, and even dinners is one of my favorite things to do. This granola is soft, chewy, and works wonderfully as a cereal if you serve it with some almond milk.



Ingredients:

  • 2 cups old fashioned oatmeal (or 1.5 cups and 1/2 cup chopped peanuts)

  • ¼ tsp salt (only if using unsalted nuts)

  • ¼ cup natural/homemade peanut butter*

  • ¼ cup honey/maple syrup

  • ½ tsp. vanilla extract

Directions:

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.

  2. Mix dry ingredients in a medium sized bowl.

  3. Place maple syrup and peanut butter in a microwave safe bowl and warm for 30-60 seconds until it’s warm enough to stir everything together. Then mix in vanilla.

  4. Add the wet ingredients to the dry ingredients and mix well.

  5. Spread over parchment paper and bake for 20 minutes, stirring the granola halfway through.

  6. Let cool 1 hour before storing. Keeps for ups to 2 weeks in airtight container at room temperature.

*Note: If you choose to use normal peanut butter or want less-sweet granola, lessen the amount of maple syrup and add more peanut butter (if desired).
