Peanut Butter Blossoms

Crispy outside, soft interior. Peanut butter and chocolate will always be a beautiful combination and these classic Christmas cookies are no exception. They are easy and fun to make!


The recipe is here, and pictures of the process are below.


Ingredients:

  • 1/4 cup softened salted butter

  • ¼ cup shortening

  • 3/4 cup sugar

  • 1/4 cup plus 2 Tbsp. packed light brown sugar

  • ½ cup creamy peanut butter

  • 1 egg

  • 1/2 tsp. vanilla extract

  • 1 ½ cup flour

  • ¾ tsp. baking soda

  • ½ tsp. baking powder

  • Additional sugar for rolling

  • Brach's Chocolate stars or Hershey's kisses

Directions:

  1. Preheat oven to 375°F. Line two baking trays with parchment paper.

  2. Cream butter, peanut butter, sugar, and brown sugar together on medium speed until light and fluffy.

  3. Mix in vanilla and egg.

  4. In a separate bowl whisk together flour, baking soda, and baking powder. Add to the dough. Mix in until just combined.

  5. Roll the dough into 1 inch balls. Roll each ball in sugar (optional) and place on baking tray.

  6. Bake 10-12 minutes, or until cookies are lightly golden, cracked, and don't look too gooey in the middle.

  7. Remove from oven and immediately stick a chocolate kiss or star in the middle. Optional: return the cookied to the oven for 1-2 minutes so the chocolate softens a little.

  8. Store at room temperature up to 1 week.

  9. Makes 2 dozen.

Now you can let them cool and they're good to go!
