Papas con Chorizo (Mexican Potatoes with Chorizo)

Spice up your already delicious fried tators with some Mexican chorizo! This is an easy and hearty recipe that you can eat any time of day, whether with cheese, eggs, tortillas, on a sandwich (such as the amazing pambazo sandwich), or anything you'd like! Note: There are many ways to make this meal. You can skip parboiling the potatoes and instead just fry the potatoes for longer, or you can cook the potatoes and onion together and then add the chorizo and cook it, do whatever you think is best!


To make Pambazo sandwiches using papas con chorizo


The recipe is here, and pictures of the process are below:


Ingredients:

  • 4 oz. Mexican pork chorizo or vegetarian chorizo (113 g)

  • 8 oz. red or other waxy potato (226 g)

  • 1/4 of a yellow or white onion (about 60 g)

  • Oil (optional)

  • Salt

Directions:

  1. Finely dice the onion, set aside.

  2. Peel and cube the potatoes into 1/4 inch cubes. Add to a small pot and cover with water. Mix in about 1 tsp. salt. Bring to a boil and boil for 5 minutes. Drain and set aside.

  3. In a non-stick pan add a little oil on medium heat. Add the onion and fry for about 5 minutes, stirring regularly.

  4. Then add the chorizo, break it into pieces and fry for about 5-6 minutes, stirring regularly (use a lid to avoid grease splatter), until browned and cooked.

  5. Remove the chorizo and onion onto a plate and set aside, but leave excess oil/grease in the pan. Add the potatoes and about 1 Tbsp. oil into the pan and fry for about 10 minutes, or until they are crispy and brown.

  6. Add the chorizo and onions back to the pan and fry for 1-2 minutes, mixing well. Taste and add more salt if necessary!

  7. Serve! You can serve it with or on toasted tortillas, with eggs, with cheese, in a burrito, in a sandwich, anyway you would like! Store leftovers in an airtight container in a refrigerator for up to 5 days.

  8. 1-2 servings. Feel free to double it!


Peel and dice the potatoes.


You'll bring the potatoes to a boil (in salted water!) and boil for 5 minutes.


Drain and set aside.


Heat a pan with oil and add the onions.


After frying the onions for about 5 minutes.


Add the chorizo.


And cook the chorizo for about 5-6 minutes.


Remove onto a plate and set aside.


Then add the potatoes to the same pan.


After frying the potatoes for about 10 minutes. I could have gone longer and gotten them more brown, but I was hungry :)


Add the chorizo and onions back in.


And mix together and cook about 2 minutes. Then you can serve it!



And serve!
