My Mom's Cinnamon Coffee Cake

My mom's coffee cake. Easy and fricken' amazing!!! I can easily eat a whole loaf in one sitting... and I do... It's a moist cake that I love to eat warm with a little bit of butter or margarine. The cinnamon sugar on the tops becomes this amazing crust and it's just... perfect! Also, this recipe is the perfect base recipe for muffins and other tea cakes! You can add lemon zest, blueberries etc.

Ingredients:

  • 1 ½ cups flour

  • ½ tsp salt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 pound butter (1 stick/113 g)

  • 1 cup white sugar (200 g)

  • 2 large eggs (~110 g)

  • 1 cup full-fat sour cream (240 g)

  • ½ tsp vanilla extract (I use 1 tsp.)

  • ½-3/4 cup nuts (chopped pecans are great!)

  • ½ cup cinnamon sugar (for topping)

Directions:

  1. Sift together dry ingredients into a bowl, set aside. In another bowl cream butter and sugar together (on medium speed for 2-5 minutes). It won't be light and fluffy but that's okay.

  2. Then mix in the vanilla. Add eggs one at a time into the butter mixture, mixing well with each addition.

  3. Then add flour mixture and mix until just combined.

  4. Mix in sour cream and nuts. It will be a thick batter.

  5. Grease a muffin pan or small 4" loaf pans with butter and pour ½ the mixture in. Note: I always put too much batter in the first layer, so don't be like me, try to only have about 3/4 inch batter in the first layer.

  6. Sprinkle 2/3 of the cinnamon sugar over the batter. Add the rest of the batter and sprinkle the rest of the cinnamon sugar on top. You can use less cinnamon sugar but I don't recommend it. This is diabeetus heaven.

  7. Bake at 375°. If in four small tins only bake for 30-35 minutes. If in a cupcake pan (12 muffins) bake for 20-22 minutes. Cool before removing from pan.

Put in half the batter to each greased pan and sprinkle with most of the cinnamon sugar. My mistake: I put more than half the batter in, so the next layer was weird, so put less than I did here for the batter.


Then add the rest of the batter (your second layer should be thicker than mine) and top with the rest of the cinnamon sugar. Then bake!
