These beans come together in 30 minutes and are great for burritos, burrito bowls, quesadillas, and American-style enchiladas! Very similar to the beans served by the chain restaurant Chipotle.

Ingredients:
1 Tbsp. olive oil
Can of black beans (~2.5 cups homemade beans)
¾ cup diced onion
1/2 red bell pepper, seeded and diced
1/2 tsp. cumin
Salt
Freshly ground black pepper
2 garlic cloves, minced
1/2 tsp. dried oregano
1/3 cup water
1/8 tsp. red pepper flakes
1/8 cup minced fresh cilantro
Juice from 1 lime (2 Tbsp. lime juice)
Directions:
In a 3-quart saucepan, sauté onions, bell pepper, cumin, and ½ tsp. salt in olive oil. Continue to cook about 5 minutes, or until vegetables are softened.
Stir in garlic, black pepper, and oregano and cook until fragrant, about 30 seconds.
Add water, beans, and red pepper flakes. Bring to a boil. Let simmer for 10 minutes.
After the mixture has cooled for 5 minutes gently mix in cilantro and lime juice. Test and season to taste with salt and pepper.
Use immediately or refrigerate up to 1 week.
Makes 3-4 cups.

After adding the veggies, cumin, and salt and before sauteing.

After sauteing the veggies and then adding in the minced garlic and oregano.

After cooking the garlic and oregano down slightly. Now time to ad the beans, water, and red pepper flakes (next photo).

After simmering 10 minutes. Everything is thickening up nicely.

After cooling down for 10 minutes I mixed in the lime juice and cilantro. It's now ready to use!
