Menemen

Menemen. Do doo be-do-do. Menemen. Do do-do do. Menemen. Do doo de-do-do de-do-do de-do-do de-do-do-doodle do do do-doo do! Forgive my Muppets reference, could not resist. This dish is surprisingly delicious. I mean it. It's very simple in terms of ingredients and process but it's savory, a bit sweet, and extremely satisfying.

The recipe, and pictures of the process are below:


Ingredients:

  • 1-2 Tbsp. olive oil

  • 1 Tbsp. butter

  • 1 large 4-6 inch Anaheim pepper, de-seeded and diced (60-70 g)

  • 2 large fresh and ripe tomatoes, grated or finely diced (400 g)

  • 2 garlic cloves, peeled and crushed

  • 1/2 tsp. salt, or to taste

  • 1/2 tsp. sugar (optional)

  • 3 large eggs

  • Toast for serving

Directions:

  1. Prep your ingredients before cooking. Crushed garlic is made by squishing the garlic with the side of your knife.

  2. In a pan on medium heat add the olive oil and butter. Once melted and heated, add the pepper and cook for 5 minutes.

  3. Add in the tomato, crushed garlic, salt, and sugar to the mixture. Stir to combine.

  4. Simmer on low-medium heat for 15-20 minutes, or until deep red and saucy.

  5. Tip: if the sauce looks dry, add about 1/4 cup water and continue cooking.

  6. When the sauce is ready, remove the garlic (eat it if you are a big garlic fan :)

  7. Crack in the eggs and gently stir to distribute them in the sauce. Do not overmix!

  8. Cook for 2 more minutes, then take off the heat. Taste and adjust seasoning (it may need more salt).

  9. Serve with buttered toast. With sourdough bread it is phenomenal.

  10. 2 servings.

I always recommend prepping the ingredients ahead of time. You can even scramble the eggs ahead of time although it's not necessary.


Start cooking the pepper in olive oil and butter.


5 minutes later and the peppers look like this. Now we'll add more ingredients:


Add the tomatoes, garlic, salt, and sugar. You'll mix it in and then simmer about 20 minutes.


After simmering 20 minutes. Ready for eggs!


Remove the garlic cloves (and eat them if you'd like) and add the eggs. Next we'll scramble them.


Scramble/mix the eggs into the tomato mixture. You don't need to mix them all the way in, just break them up.


After 2 minutes the eggs are cooked and it's ready to serve!


Serve with buttered toast and enjoy!!!
