Lentil BBQ Sandwiches

An easy & healthy vegetarian/vegan alternative to pulled pork. Honestly if you put BBQ sauce on almost any savory ingredient it will taste good. I am not a big fan of mayonnaise, but it works perfectly with this recipe! This recipe is not difficult to make and you can easily freeze leftovers.



The recipe for a full batch is here, and below are pictures of me making a half batch.


Ingredients:

  • 1-2 Tbsp. cooking oil

  • 1 1/2 cup diced onion

  • 2 cups cooked lentils (320 g)

  • 1 1/2 cup shredded carrot (200 g)

  • 2 tsp. ground paprika

  • 1 tsp. garlic powder

  • 2 Tbsp. brown sugar (optional)

  • 1/4 tsp. salt, or to taste

  • 1/4 tsp. black pepper

  • 3/4 cup BBQ sauce

Directions:

  1. Prepare lentils, 1 cup dry makes 2 cups cooked.

  2. Heat a pan on medium heat and add the oil and onion. Cook about 5 minutes, stirring occasionally.

  3. Add the lentils, carrot, spices, sugar, and BBQ sauce. Stir until well mixed.

  4. Cook on medium-low heat another 10 minutes, stirring occasionally.

  5. Optional: When finished mash with a masher/fork to combine or pulse the mixture in a food processor a few times. You don't want it too mushy, just enough so the mixture isn't so loose. And it's done!

  6. Makes abut 5-6 sandwiches

  7. Tip: When they're almost done cooking, spread a layer of mayonnaise/miracle on the insides of a bun, toast until golden brown on low/medium heat in a clean pan. This will make it taste amazing.

  8. I like to assemble my sandwich with a toasted bun, the sandwich mix, a little mayo, and more BBQ sauce, but you can change this to your liking with something like coleslaw.

Here I make a half batch:


Cook the onions in oil about 5 minutes.


Then add the cooked lentils, carrots, spices, and BBQ sauce. Mix together and cook 10 minutes.


And it's done cooking! You can eat as is or do the next step of mashing/pulsing in a food processor.


I pulsed the mixture in a food processor until it came together.


Now we toast the bun (I highly recommend):



A well toasted bun!


And now we assemble! I add mayo and more BBQ sauce to mine but you can add coleslaw or whatever you'd like!
