These unbelievably good cookies have both lemon and cinnamon, which sound contradicting, but trust me! They work excellently together! I am a huge fan of any jam with these cookies, but especially apricot jam which just brings out the lemon flavor so well. The recipe is here, and pictures of the process are below.

Ingredients:
1/2 cup soft unsalted butter (113 g)
1/2 cup powdered sugar (62 g)
1 large egg yolk (15-18 g)
1/2 tsp. vanilla extract (3 g)
1/4 tsp. ground cinnamon (0.7 g)
1/2 tsp. lemon zest (0.8 g)
1/4 tsp. salt (2 g)
1 Tbsp. lemon juice
1/2 cup almond flour, spooned and leveled (48 g)
1 1/4 cup all purpose flour, spooned and leveled (163 g)
Apricot (my favorite with these cookies, strawberry, raspberry, or any jam
Additional powdered sugar for dusting
Directions:
Cream butter and together for 1-2 minutes.
Add powdered sugar and egg yolk and combine.
Add vanilla, cinnamon, zest, salt, and lemon juice and mix well.
Mix in almond flour, and then the flour, just until combined.
Shape into a disk, wrap, and chill at least an hour, up to 2 days.
Preheat the oven to 350°F.
Roll dough on a floured surface until 1/4 inch (6 mm) thick and cut into 2" or 5 cm wide cookies. Place on parchment paper lines baking sheets, about 1 inch apart.
Bake 13-14 minutes, or until golden brown on bottom, but the tops of the cookies are still pale.
Dust the top halves with powdered sugar, add jam to the bottom cookies, and sandwich together.
Makes about 14-16 sandwich cookies. Store leftovers covered at room temperature (they will soften) up to 3 days, or freeze up to 1 month (add jam after thawing).
