Lebkuchengewürz (German Gingerbread Spice Mix)


This complex spice mixture goes far beyond the traditional cinnamon, ginger, and cloves you find in most gingerbread. It also has nutmeg and/or mace, star anise, cardamom, coriander, and allspice, which come together into an amazingly aromatic and delicious spice mixture used in traditional German baking. Some spices you may have to grind yourself with a coffee/spice grinder, but if you want to amp up your gingerbread game this is the way to do it!

Ingredients:

  • 2 Tbsp. + 2 1/2 tsp. ground cinnamon (18 g)

  • 2 1/4 tsp. ground cloves (5 g)

  • 2 1/4 tsp. ground ginger (3 g)

  • 1 tsp. ground cardamom (2 g)

  • 1 1/8 tsp. ground allspice (2 g)

  • 1/2 tsp. ground mace (or nutmeg) (1 g)

  • 1/2 tsp. ground nutmeg (1 g)

  • 3/4 tsp. ground coriander (1 g)

  • 3/4 tsp. ground star anise (1 g), or 1/4 tsp. ground anise seed


Directions:

  1. Mix all the spices together until thoroughly combined. The anise is optional so you can omit it.

  2. Store in an airtight container or bag up to 1 year.


The spices I used. I ground the seeds of the cardamom pods and the star anise (green jar) with a spice grinder.
