Korean Braised Tofu (Dubu jorim)

This Korean side dish is a lovely and delicate blend of spicy, salty, and sweet. Good source of protein and it goes great with fried rice or other sides! The recipe is easy to make, just needs a bit of prep work. Despite the 1 Tbsp. pepper flakes it's not too spicy!

Ingredients:

Braising sauce:

  • 1 1/2 Tbsp. light soy sauce or Kikkoman soy sauce

  • 1 tsp. sugar

  • 1 Tbsp. Korean hot pepper flakes

  • ½ cup water

Other ingredients:

  • 1 12 oz. or 350 g package of firm tofu, sliced in half and into 1/4 inch pieces

  • 3 tbsp. peanut or vegetable oil

  • 2 cloves garlic, minced

  • ½ cup minced onion

  • 2 green onions, thinly sliced (set aside 1 Tbsp. for garnish)

  • 1 red cayenne or Fresno pepper, sliced thin (optional)

  • 1 tsp. sesame oil

  • 1 tsp. toasted sesame seeds

  • Rice or other food to serve it with

Directions:

  1. Begin preparing rice or other side dishes.

  2. Mix together the braising sauce and set aside.

  3. Rinse the tofu before cutting the block in half longways and then into 1/4 inch pieces (see picture below).

  4. Heat the oil on medium-high heat in a flat bottom skillet. Add tofu pieces and fry until golden brown on each side, about 7-8 minutes on each side.

  5. Remove the tofu and set aside.

  6. In the same pan add the onion, green onion, and garlic. Cook until slightly brown and caramelized, about 5-10 minutes.

  7. Then add the sauce and bring to a gentle boil. Cook for 5-10 minutes on medium heat, until the sauce thickens/reduces.

  8. Then mix in the tofu and chili. Cook 1-2 more minutes.

  9. Mix in sesame oil and top with sesame seeds. Top with leftover green onions, if desired.

  10. Serve. Can store in an airtight container in the refrigerator for up to 5 days.


These were the ingredients I used.

This is how I cut the tofu block. In half and then in thin pieces. You can make them thicker.


Begin frying the tofu.


After frying the tofu on each side.


Set the tofu aside.


Before cooking the onions, green onions, and garlic.

After adding the braising sauce. We'll let it simmer until it's reduced.


After the sauce has reduced.


After mixing in the tofu and the chili.


After mixing in the sesame oil and seeds. It's fucking done!
