Ooooh baby. Only 4 ingredients! This is some ultra savory toast that's an addicting blend of spicy acidity and rich ccreaminess. This is incredibly easy to make and easier to eat :D I do recommend just making one slice due to the salt levels in kimchi, but if you're sweating in 36°C heat like me, you can go for two!

The original recipe is by this very cool youtube channel that showcases international foods that are easy to make/try: https://www.youtube.com/watch?v=Vhst2EzEVv8&ab_channel=BerylShereshewsky

The recipe is here, and pictures of the process are below:

Ingredients:

  • 1 or 2 slices of bread (white bread, sourdough, or any neutral or savory bread)

  • Kewpie mayonnaise

  • Kimchi (~2-4 Tbsp. per slice of bread)

  • Cheese (e.g. Mozzarella, Cheddar, gruyere etc.)

Directions:

  1. Start preheating your oven to broil.

  2. Cut the kimchi into small pieces in a bowl with scissors if you want to avoid permanently staining a cutting board. Set aside.

  3. Toast the bread until golden.

  4. Add on a layer of Kewpie mayo (to your taste preference) onto the toasted bread.

  5. Add the kimchi in an even layer on top. Then top with as much cheese as desired.

  6. Place on a pan under the broiler in your oven and toast for about 1-5 minutes, or until it's lightly browned (watch closely so the cheese and bread don't burn!)

  7. Consume immediately!

The ingredients I used, feel free to play around with the bread and cheese!

I recommend using scissors to chop the kimchi in a bowl to avoid stains!

Toast the bread (I used a toaster) and now it's ready for the toppings!

Add a layer of Kewpie mayo.

Then a layer of kimchi (as much as you want)

And then the cheese!

Then broil for a few minutes.

And it's all melty and delicious! Time to enjoy!!!!!!

So beautiful!

In all of it's spicy savory cheesy glory!
