Kimchi Rice Bowl

This beautiful rice bowl is truly phenomenal in my opinion, and very easy to make! I seriously, seriously love this recipe and I could not recommend it more if you like kimchi! It's a perfect balance of spicy, tangy, sweet, and salty. Just, oh my goodness. When mixed together the egg yolk combines with the kimchi liquid and soy sauce into a delectable sauce that the rice and tofu soak up. This rice bowl may just be my idea of perfection. Seriously.


The recipe is here, but I just eyeball the ingredients, and pictures of the process are below:


Ingredients (per bowl):

  • 1/2 cup cooked brown or white rice

  • 1/4 to 1/3 cup medium tofu (drained) or more rice/other protein/vegetables

  • 1 to 1 1/2 Tbsp. kimchi liquid

  • 1-2 tsp. soy sauce

  • About 1-2 Tbsp. finely chopped green onions

  • 2 eggs

  • Butter or oil to fry the eggs

  • About 1/4 cup kimchi

  • 1-2 tsp. Chili Oil (I like Lau Gan Ma)

  • Optional: Sesame seeds

Notes: I recommend using fresh, recently purchased kimchi for this recipe because older kimchi can be too sour. You can use fried eggs (sunny side up or over-easy) or soft-boiled eggs. The soft runny yolk is very important in this recipe! If you are vegetarian use vegetarian kimchi. To make this gluten-free replace the soy sauce with tamari.


Directions:

  1. Place the kimchi in a bowl and use scissors to cut into small pieces. You can also do this on a cutting board with a knife but it may permanently stain it. Set aside.

  2. Add the rice and tofu to a bowl and microwave for 1 minute until hot.

  3. Then drizzle on the kimchi liquid, soy sauce, and some green onions.

  4. To fry the eggs, heat a non-stick pan on medium heat and add the butter. Fry the eggs sunny side up (use a lid for this method) or over-easy.

  5. Immediately add the eggs on top of the tofu, add the chopped kimchi (as much as you'd like), and garnish with chili oil, green onion, and optional sesame seeds.

  6. To eat this I break the eggs into small pieces and mix it all together so it gets lovely and saucy!

  7. Enjoy!!!


All the ingredients I used, plus a little butter for frying the eggs.


Add rice.


Then tofu or something else. Warm in a microwave.


Then kimchi liquid, soy sauce, and green onions. Next we work on the eggs!


To make sunny side up eggs I first start frying in butter.


When the whites are mostly cooked I add a lid on top so the whites finish cooking but the yolks stay yellow.


They're done! So now we can add them to the bowl asap!


Add the eggs and chopped kimchi to the bowl.


Garnish with chili oil, green onions, etc. and you're ready to serve!


Eat it by first breaking up the eggs into smaller pieces and mixing it all together :D
