Huevos Rancheros (Mexican Ranch-style Eggs)

This easy breakfast is fantastic in it's combination of flavors! It combines the richness of egg yolks, seasoned beans, and a crispy tortillas with the spicy tang of a delicious salsa. It is filling but not heavy, so it is the perfect way to start a long day! Feel free to add more spices, heat, or otherwise change this recipe to suit your taste!


For this recipe you can make your own salsa, but I tried this and honestly I didn't like it as much as store-bought salsa... so go with what's more delicious for you!!!

Ingredients (for 2):

  • 2 corn tortillas

  • 2-3 Tbsp. vegetable or canola oil

  • Vegetarian or normal refried beans (store-bought or homemade)

  • 2 eggs

  • Butter or oil to fry eggs

  • Salsa (store-bought or homemade)

  • Salt

  • Cilantro (optional)

Directions:

  1. Heat about 1/4 inch oil on medium heat in a pan. Use a small piece of tortilla and dip it into the oil to tell when it's hot enough (or should bubble or sizzle).

  2. Add the tortillas, 1 or 2 at a time, and fry, lightly pressing it down so it fries evenly, for about 2-3 minutes on each side (this may take practice). the result should be crispy and lightly browned.

  3. Set fried tortillas on the side to drain on paper towels.

  4. Save the oil or discard it once cooled.

  5. Warm up the refried beans in a microwave or stovetop. Taste and adjust seasoning as necessary.

  6. Add the butter or a little oil to a non-stick skillet on medium or low heat. Fry the eggs to your desired doneness (I like sunny side up with a runny yolk and use a lid to help with this). Set aside.

  7. To assemble, spread about 2 heaped Tbsp. refried beans on the tortillas. Then add the eggs, spoon the salsa over, sprinkle salt and/or cilantro (optional) on top. Serve hot!

  8. Makes 1-2 servings. Feel free to double or triple the recipe!



The ingredients I used (I made my own salsa but after doing so I don't recommend it), but you only need the oil, tortillas, salt, eggs, and refried beans.


Start heating your oil. To tell when it's ready dip a small piece of tortilla inside and if ir bubbles the oil is hot enough!


Begin frying a tortilla, where it puffs up make sure to use a heat-safe spatula to press it down so it cooks evenly.


Flip it and continue frying on the other side.


Once cooked drain on paper towels.

At this point you'll want to reheat the beans.


Fry the eggs, I use a lid to help cook the whites but not the yolk.


Eggs are cooked.


Everything is ready, time to assemble!!!


Add your tortillas.


Then beans.


Then eggs. They look like eyes or wonky boobs :D


And finally the salsa and any toppings you'd like!
