Honeycomb Toffee

This crunchy and sweet candy tastes excellent when dipped in chocolate! Although it only has three ingredients, it is a tad finicky to make. You have to be patient while th sugars melt but very quick when you mix in the baking soda!


The recipe is here, and pictures of how it's made are below:


Ingredients:

  • 1 cup white sugar (200 g)

  • 2/3 cup corn syrup / golden corn syrup (200 g)

  • 2 1/2 tsp. baking soda

  • 1/2 cup chocolate chips, melted (optional)

Directions:

  • Prepare a 9x9" pan lined with parchment paper or greased tin foil.

  • Mix together sugar and corn syrup in a medium sized pot. Heat over medium or low heat and DO NOT stir.

  • It will slowly melt and bubble away. Be patient and don't crank the heat up.

  • Heat until the mixture reaches 145°C/293°F. Then take off the heat and add in the baking soda, mixing it in quickly with a rubber spatula!

  • The mixture will bubble up and once the baking soda is all mixed in, quickly pour the mixture into the prepared pan.

  • Let cool for 1 hour before breaking apart. Dip pieces in melted chocolate and let cool, if desired.

  • Stays good for 2 weeks at room temperature.


Prepare a baking tray with parchment paper or greased tin foil. I didn't have a 9x9" pan so I used a bread pan to reduce the size of a 9x13" pan.

All the sugar has melted and when it hit 145°C I added the baking soda (no picture included). This caused it to bubble a lot and lighten in color as I mixed the baking soda in. Then I quickly poured the mixture into the prepared pan (next picture).


After pouring the mixture into the prepared pan.


After cooling down for an hour. Now it's time to break it apart!


After breaking apart. Dip the pieces in chocolate if desired.
