Granola Bars

My go to granola bar recipe. So fricken' good. A beautiful combination of sweet and salty with lightly roasted flavors. They are sweetened with dates and a little maple syrup and are full of fiber! Although they are on the sweeter side they will give you plenty of energy! If you use salted nuts they will be on the saltier side!



Recipe:


Ingredients:

  • 3/4 cup date paste (210 g)

  • 1/4 cup maple syrup/honey/more date paste (70 g)

  • 1/2 cup natural peanut butter (130 g)

  • 1 cup mixed nuts, loosely chopped (~130 g)

  • 1 1/2 cups old-fashioned oatmeal (150 g)

  • 1 tsp. vanilla extract (5 g)

  • Optional: chocolate chips, dried fruit, ground flax seeds, etc.



Directions:

  1. Toast your oats and nuts in a 325°F for 10-15 minutes or until slightly golden brown.

  2. Meanwhile, mix together date paste, vanilla extract, peanut butter and maple syrup/honey/more date paste.

  3. Stir and pour oats and nut mixture into the date paste mixture and then mix together.

  4. If the mixture seems dry, add more wet ingredients. Add in any add-ins (e.g. ground flax seeds etc.) and mix in.

  5. Transfer the mixture to an 8x8-inch baking dish or other small pan. Lining the pan first with parchment paper or plastic wrap makes them easier to remove and cut later!

  6. Press down firmly on the granola bar mixture until uniformly flattened and let firm up in fridge or freezer for 15-20 minutes.

  7. Store in an airtight container for up to a week in the refrigerator. They can also be wrapped tightly, covered, and stored in a freezer for up to 1 month.

  8. 6-9 servings.
