Gnocchi with Tomato & Parmesan Sauce

Pasta and gnocchi are absolute comfort foods. This (very saucy) meal is a balance of salty, sweet, rich, and umami. Truly glorious and even better when served with garlic bread or focaccia. You could also use this sauce recipe for pasta!


Pasta and gnocchi are absolute comfort foods. This (very saucy) meal is a balance of salty, sweet, rich, and umami. Truly glorious and even better when served with garlic bread or focaccia. You could also use this sauce recipe for pasta.


The recipe is here, and pictures of the process are below.


Ingredients:

  • 4 Tbsp. extra virgin olive oil

  • 1/2 yellow onion diced

  • 8 oz. mushrooms sliced

  • 3 cloves garlic, minced

  • 2 Tbsp. tomato paste

  • 28 oz. can crushed tomatoes or any preferred pasta sauce (I use 12 oz. Arriabbiata sauce and 14 oz. can crushed tomatoes with basil)

  • Pinch of red pepper flakes

  • 16 oz. potato gnocchi (homemade)

  • 1 tsp. dried basil (or 3 chopped leaves of fresh basil)

  • 1 tsp. dried oregano

  • Salt (to taste)

  • Pepper

  • 1/2 cup freshly grated Parmesan cheese

  • 1/4 cup heavy cream (optional)

  • 3 cups de-stemmed and roughly chopped spinach


Directions:

  1. Add olive oil to a pot on medium heat. Add in the diced onion and mushrooms. Fry for 5-10 minutes or starting to become transparent.

  2. Add in the garlic and tomato paste and sauté for 60 seconds.

  3. Then add in the 28 oz. tomato sauce and red pepper flakes. Simmer for 15 minutes. While the sauce is simmering, start preparing the gnocchi by adding them to boiling water and straining when they float to the surface. You can cook them in batches.

  4. Once the sauce is done simmering, add in the dried oregano, dried basil, salt, and pepper to taste. Then mix in the parmesan cheese and taste the sauce. If the sauce tastes like it needs heavy cream then add it, it will dilute the flavor of the tomatoes but will make the sauce rich and creamy.

  5. Stir in the gnocchi and spinach. Serve.

  6. Makes 4-5 servings.


So we have all of our ingredients here except the gnocchi (which I was making outside the picture).


1. Add olive oil to a pot on medium heat. Add in the diced onion and mushrooms. Fry for 5-10 minutes or starting to become transparent (next picture).


When the onions are turning transparent and mushrooms are softened, add the minced garlic and tomato paste. Cook for about 60 seconds while stirring.


After cooking the garlic and tomato paste, now time to add the sauces (next picture).


After adding the sauces and before simmering for 20 minutes.


While the sauce is cooking, start boiling the gnocchi. You'll know they're ready because they'll float to the surface, as shown here.


After simmering 20 minutes. Looks about the same :)


Before mixing in the spinach, oregano, black pepper, parmesan, and heavy cream. I know it looks like a lot of spinach but it really isn't.
