Garlic Fried Rice with Kewpie Mayo


Mayonnaise and garlic with rice? Have I lost my mind? Yes, long ago. But this delicious fried rice is super super savory. The Japanese mayonnaise really brings all the flavors together while also providing substantial richness. It's so tasty that I actually can't taste the garlic. You might get a stronger garlic flavor if you mince it finely. Keep in mind that Kewpie mayo has a different flavor than most American mayonnaises, it's more rich and creamy, and slightly sweet with a little tang.

Ingredients:

  • 2 cups cold rice

  • 3 Tbsp. Kewpie Mayonnaise

  • 2 Tbsp. butter

  • 2 green onions, sliced thin (save some for garnish)

  • 3 garlic cloves, coarsely minced

  • 1 1/2 Tbsp. light soy sauce or Kikkoman

  • 2 eggs, whisked


Note: you can decrease the amount of mayo and soy sauce to make it a little lighter and less salty. Feel free to add more protein or veggies.


Directions:

  1. Mix the mayo with the rice. Set aside.

  2. Prepare the onions and garlic. Whisk the eggs together. You want everything prepped before you start cooking because it cooks very fast.

  3. On medium or high heat melt the butter in a non-stick skillet. Ad the garlic and green onion and saute for 1-2 minutes, stirring.

  4. Add the rice and fry about 1 minute.

  5. Stir in the soy sauce.

  6. Move the rice to the side. Add in the egg and scramble. Then mix everything together.

  7. Top with some fresh green onions and serve!


Make sure everything is ready before cooking. The eggs are minced, the onion and garlic sliced/minced. The mayo is mixed with the rice.


Begin cooking the onion and garlic in the melted butter.


After cooking the onion and garlic. Then we will add the rice next.


After adding the rice and cooking about 1 minute.


After mixing in the soy sauce. Next we will fry the eggs.


Push the rice to one side and fry the eggs.


Once the egg is cooked mix with the rice and it's ready!


Garnish with green onions and serve!
