Fresh Tomato and Cucumber Salad

This bright flavored salad is a blend of Mexican pico de gallo and Mediterranean salad. This combination is perfect as a side of a Mediterranean-style meal, inside a pita sandwich, or as a side to falafel, hummus, and pita. It's very easy to make and I hope you enjoy!


I really like serving this with flatbread, hummus, and/or falafel.

Ingredients:

  • 1 cup chopped tomato (exclude the inside part with seeds & liquid)

  • 1 cup diced cucumber

  • 1/4 cup sliced red/white onion

  • 1/2 diced avocado (optional)

  • 2 Tbsp. chopped fresh cilantro, parsley, or mint (I prefer cilantro)

  • 1 Tbsp. olive oil

  • 1 Tbsp. lemon juice

  • 1/2 tsp. salt

  • Sprinkle of black pepper


Directions:

  1. Mix all ingredients together. Best eaten fresh, because otherwise the avocado oxidizes (turns brown and doesn't taste as good).

  2. If unable to eat it all, store in an airtight container up to 2 days in the refrigerator.
