Eggs with Chorizo (Huevos con Chorizo)


Just two ingredients for the base recipe of this dish! Huevos con chorizo is delicious and spicy on it's own, and when made into tacos! The flavorful Mexican chorizo adds another savory dimension to scrambled eggs. This is easy to make but watch out for the chorizo splatters! You can serve eggs with chorizo on it's own, with tortillas, beans, potatoes, or pretty much anything else!

Ingredients:

  • 3 large eggs (~150 g)

  • 3 oz. Mexican chorizo (85 g)

  • Optional: Tortillas, cheese, cilantro etc.

Directions:

  1. Heat a non-stick pan on medium heat. Add the chorizo and break it into pieces. Fry for about 5 minutes, stirring regularly, or until it turns dark red or brown. It will splatter a lot, so I hold a lid above the pan to prevent a mess.

  2. Set the pan aside (off the heat) and cover. This allows it to cool slightly.

  3. Scramble the eggs in a bowl. Reduce the heat to low-medium and place the pan with the chorizo back on the heat. Add in the eggs and slowly scramble them, mixing them into the chorizo, until fully cooked.

  4. Serve! You can serve it with toasted tortillas, cheese, fried potatoes, or just on it's own. It's spicy and delicious!

  5. 1-2 servings. You can make less or more, as long as the eggs and chorizo are in a 1 egg:1 oz. chorizo ratio you're good!


The ingredients I used. I also ate them with some cheese, cilantro, and toasted tortillas but that's not necessary!


I use 1 egg per once of chorizo.


Before cooking the chorizo.


While cooking the chorizo it's very helpful to have a oil splash guard such as a lid!


After cooking the chorizo. Now we take it off the heat to cool slightly.


Off the heat and covered, temporily!


Whisk the eggs together.


Return the pan to the heat and add the eggs.


Cook and mix until scrambled and cooked to your liking!


Serve!


If you want to make them into tacos, you can toast some tortillas, and top with cheese and cilantro or other toppings!



I put mine in toasted tortillas.


And top with some cheese (e.g. cotija) and cilantro.


Truly colorful and delicious!
