Date Paste

I sound like an old lady, but I love dates, especially because they taste like caramel. They go great with oatmeal, in granola, and in other sweetened goods. Making them into a paste makes it easier to add to these things or to spread on toast/crackers. Not only do they taste good, they're also full of fiber to really get you going at the start of the day.

Ingredients:

  • 150 -300 g (1 to 2 cups) pitted dates

  • 1-2 cups water or more

Directions:

  • Long soak method: Cover dates in cool water and soak overnight.

  • Quick soak method: Soak them in ~1 cup hot water for 1-2 hours, ur until easily smooshed.

  • After soaking drain the dates, but reserve some of the soaking water (1-2 cups).

  • Add the dates and some of the water to a blender or food processor. Start blending, scraping down sides as necessary, until you get a smooth paste.

  • If you're struggling to get a smooth paste, or want it more liquid, add more of the water and blend.

  • Seal and store in a refrigerator up to three weeks.

  • Makes about 1-2 cups.


Add the dates and water into a container. Cover and soak until soft.


After soaking. Yours may be lighter in color.

Add to a blender/food processor and blend until a paste forms. Use as much of the soaking water as necessary to get it to your desired consistency.


After blending. Mine was a little thick, but you can make your thinner.
