Cinnamon Sugar Roasted Sweet Potatoes

Sweet potatoes, brown sugar, cinnamon, vanilla, and pecans? What a wonderful combination! All the flavors of fall to make you feel warm and fuzzy inside!


Ingredients:

  • 1 large sweet potato (or two small)

  • 1/3 cup brown sugar

  • 1/2 tsp. vanilla extract

  • 1/2 tsp. cinnamon

  • 1/2 cup chopped pecans

  • Vegetable/canola oil

Directions:

  1. Preheat your oven to 425°F.

  2. Dice sweet potatoes into 1/2 inch cubes (mine were a little larger than 1/2 inch, but I recommend aiming for 1/2 inch.)

  3. Lightly oil the diced sweet potato pieces and place on a tin foil lined baking sheet.

  4. Place in the oven and bake for 20 minutes.

  5. Meanwhile, mix together brown sugar, cinnamon, vanilla, and pecans.

  6. When 20 minutes has passed, check to see if the sweet potatoes can be pierced with a fork. Then lightly oil them again, sprinkle on all the cinnamon sugar mixture, and mix in. Return to the oven for another 5-10 minutes, or until it's melted but not burnt.

  7. Serve immediately and enjoy fresh!

The cinnamon sugar mixture (should include pecans! I decided to add them later which is why you don't see them here)


After 20 minutes of baking. The fork indicates they're almost ready!


So I sprinkled the cinnamon sugar mix on them, mixed it around, and baked for another 7 minutes or so.


After baking again (added the pecans now but you should mix them into the cinnamon sugar mix!)
