A soft, delicious cake that's great for tea or coffee, or as an afternoon treat! It's a combination of a banana bread with a cinnamon coffee cake!

The recipe is here, and pictures of the process are below.

  • 1/4 cup salted butter, softened

  • 1 cup granulated sugar

  • 1 egg

  • 1/2 tsp vanilla

  • 1/2 cup milk

Crumb Filling and topping

  • 1/2 cup cold butter, cut into 1/4 inch cubes

  • 1 cup light brown sugar

  • 1 cup flour

  • 3/4 cup powdered sugar

  • 1-2 Tbsp milk

Directions:

  • Preheat oven to 350°

  • Spray a 9" round or square baking pan with cooking spray, set aside.

  • In a medium bowl whisk together flour, baking powder and salt.

  • In a mixer bowl mash bananas until they become liquified.

  • Mix in butter into the bananas until combined. Then mix in sugar, eggs and vanilla.

  • Stir in milk and flour until combined.

  • Prepare crumb filling/topping by combining all the ingredients together cutting them together with a fork or pastry cutter until a coarse crumb forms.

  • Pour 1/2 of the batter into the prepared pan. Top with 1/3 of the crumb mixture. Cover with the remaining batter and top with remaining crumb mixture.

  • Bake for 40-50 minutes until the center is set and a toothpick comes out clean.

  • Cool for 45 minutes.

  • If desired, mix powdered sugar and milk together and drizzle on top.

  • Can be served at room temperature.

  • Store at room temperature up to 3 days or in the refrigerator up to 1 week.
