These are like a brownies in the form of a cookie! Rich and full of chocolate goodness. One cookie is quite satisfying! An amazing christmas cookie to please chocolate lovers.

The recipe is here and pictures of the process are below:

Ingredients:

  • 1/2 cup unsalted butter, softened to room temperature

  • 1/2 cup granulated sugar

  • 1/2 cup packed light or dark brown sugar

  • 1 large egg, at room temperature

  • 1 teaspoon pure vanilla extract

  • 1 cup all-purpose flour (spooned and leveled)

  • 1/2 cup + 2 Tablespoons unsweetened cocoa powder

  • 1 teaspoon baking soda

  • 1/8 teaspoon salt

  • 1/2 cup mini chocolate chips or finely chopped dark chocolate

  • 1 cup confectioners' sugar, for rolling

Directions:

  1. Beat the butter in a mixer for 1 minute or until smooth. Mix in the brown sugar and white sugar for 2-3 minutes until light and fluffy.

  2. Mix in the egg and vanilla until combined

  3. In a separate bowl, sift in the cocoa powder. Add the flour, salt, and baking soda and whisk together.

  4. Add the dry ingredients to the wet ingredients, gradually while mixing on low speed. Mix until just combined. Then mix in the chocolate chips.

  5. Cover and chill the dough for 1 hour. This makes it easier to roll out.

  6. Preheat the oven to 350°F. Line 2 baking trays with parchment paper.

  7. Roll the dough into 1 1/4 inch diameter balls. Squish them slightly so they're about 1/2 inch wide disks. Toss thoroughly in powdered sugar and place on the baking tray. Bake cookies for 9-11 minutes, or when they are cracked and don't look too gooey.

  8. Cool for an hour before storing.
